After a day spent baking with the little ones, i thought id share one of our favourite recipes for all you home baking sweet lovers.
You will need...
150 grams unsalted butter or margarine.
450 grams self raising flour.
a pinch of salt.
150 gram of sugar (regular granulated).
4 eggs, lightly beaten.
strawberry jam.
2x baking tray.
greaseproof paper.
Method...
- Lightly grease your baking trays and line with greaseproof paper.
- Rub the fat into the flour and salt until the mixture resembles fine breadcrumbs.
- Stir in the sugar.
- Make a well in the centre, add the eggs and mix well to form a stiff dough.
- Turn out the mixture onto a well floured board and form into a roll.
- Cut into 10 equal pieces, shape them into balls and place well apart on baking tray.
- Make a well in the centre of each, and add a little of the strawberry jam.
- Close up the openings to hide the jam inside.
- Sprinkle a little more sugar over your dough balls.
- Bake in the oven at 200C for about 15 mins, or until they look like these.
Not quite a cake, and not quite a biscuit these are somewhere in between and are very pleasing on the tastebuds. Let me know if you made some yourself, and how much you enjoyed them.
