After gym that's one of my favourite meal especially when I get salad from my mom's garden 🙂 And it's so easy to make it. This recipe is for 2 person, so when you're alone then you can do this 2 times or for 2 days. All you need is:
For the salad:
1 Salad /
1 Cucumber /
1 Radish /
1 Onion (I prefer a shallot) /
1 Can Corn .
For the dressing:
75 gr. Almonds /
50 ml Olive Oil /
50 ml Rape Oil (you can also usel Nut Oil or use both) /
25 ml Balsamico /
100 ml Water /
some agave thick juice (for some sweetness) /
Some Salt and Pepper .
For the salad all you have to do is to cut the vegetables and put the ingredients in a bowl.
For the dressing you have to fry the almonds in a pan (but without oil) until they are lightly brown (browner as they are naturally) then put the nuts together with all the other ingredients for the dressing (except the water) in a blender mix it up and put the water in it till the dressing has reached to the right consistency.
Enjoy your meal with some bread or a protein shake or both 😋
