Hey everyone. Today I will be doing a DIY healthy take on Pesto Sauce. It is a little different than your conventional pesto sauce, but variety is the spice of life. Lets get to it...
Ingredients needed for this healthy pesto sauce:
4 cups of fresh flat-leaf parsley leaves
1/2 cup of toasted chopped walnuts
2 Tbsp toasted flax-seeds
2 Garlic cloves
1/2 tsp Kosher Salt
1/2 tsp Black pepper
1/3 cup grated Parmesan cheese
2 tsp lemon zest
2 Tbsp fresh lemon juice
1/4 cup extra virgin olive oil
6 Tbsp water
Directions:
Process 1/3 cup toasted chopped walnuts, 2 Tbsp toasted flax-seeds, 2 garlic cloves, 1/2 tsp Kosher salt, and 1/2 tsp black pepper in a food processor for 1 minute. Add 4 cups fresh flat-leaf parsley leaves and 1/3 cup grated Parmesan cheese, 2 tsp lemon zest, and 2 Tbsp fresh lemon juice and process until smooth.
With the processor running, gradually add 1/4 cup extra virgin olive oil and 6 Tbsp of water.
Process until all ingredients are combined and smooth.
That is it. The toasted flax-seeds and walnuts help bring out their rich, nutty flavor. Serve on steak or chicken, or stir into your favorite pasta dish. Enjoy! Thanks for stopping and I will see you soon.
