I definitely would not consider myself a cook! Not great at cooking. Plus, being so busy working part time, along with spending a lot of time working on Mindscape Magazine , I hate spending too much time in the kitchen, so the quicker and easier it is to make dinner, the better!
This is one of my favourite vegan dishes, garlic, onion and mushroom spaghetti which is very easy and quick to make, and delicious - my kind of cooking.
These are the ingredients you need to serve two people:-
o 250g uncooked spaghetti
o 6 cloves garlic, thinly sliced
o 1 chopped onion
o 4 large mushrooms chopped
o ½ cup olive oil
o ¼ teaspoon chilli flakes
o ½ teaspoon olive oil
o Salt and freshly ground black pepper to taste
o A few dashes of Tabasco
o ¼ cup chopped fresh chopped parsley
o Also save about 150 mls of the water from the cooked pasta
Cook the spaghetti in a large saucepan of boiling water for about 12 minutes, stirring occasionally until cooked through. Also add some salt and a bit of olive oil to the water.
Drain the pasta and set it aside, and save about 150mls of the pasta water.
Add the garlic and olive oil to a pan, I usually use my trusty old wok, it gets used for everything! Cook the garlic on a medium heat until it starts to slightly turn a golden brown. Then add in the chilli flakes, garlic salt, some salt and pepper to taste and the garlic and mushrooms. You can also add a few drops of Tabasco sauce if you like it a bit hot and spicy.
Cook for about another 5 minutes. Also add the water and stir, bring to the boil and simmer for a few more minutes.
Then add to the mix, the cooked spaghetti and toss so that it is fully covered in the mixture, and all done!
Today I sprinkled dried parsley on top as I had run out of fresh, but usually I would chop about a quarter of a cup of fresh parsley and add that as the finishing touch.
You can also make different versions of this dish basically by adding whatever you like to it - I’ve added sweetcorn, olives or broccoli in the past too.
