Don’t let the name fool you, strawberries aren’t the only fruit featured in this salad. This recipe is heavy on summer favorites like mandarin oranges, cranberries, and apples. Easy to prepare and hard not to love, this salad is a favorite recipe of mine. It is the perfect addition to any meal and a perfect dish to bring along to a summer barbecue or dinner party.
Ingredients:
- 5 ounces of spring mix (spinach, arugula, green leaf lettuce)
- ½ large cucumber
- 4 mandarin oranges
- 5 strawberries
- 1 apple (honeycrisp works well in this recipe)
- 3 tablespoons feta cheese
- 2 tablespoons dried cranberries
- 2 tablespoons chopped walnuts
- Layer half of the spring mix in a large bowl
- Cut cucumbers, apples, and strawberries into desired shape/size. I prefer small bites for salads to ensure incorporation of all of the ingredients.
- Peel oranges and separate the orange segments.
- Evenly distribute half of the fruits, vegetables, cheese and walnuts on the spring mix in the bowl.
- Place remainder of spring mix on top of the previous layer and repeat even distribution of other ingredients on top.
- Serve and enjoy!
This salad is best if served immediately, but can be refrigerated for up to 24 hours. It is best with a balsamic vinaigrette.
We ate this along with grilled balsamic maple tofu.
