Who doesn’t like a crunchy bruschetta with the taste of fresh basil and sun-ripened tomatoes?! The taste of light olive oil combined with a hint of garlic and balsamic vinegar?! And finally, the smooth taste of buffalo mozzarella?!
Today I would like to share my favourite Italian bruschetta recipe with you! I got a little bit influenced by our last trip to Italy where we had a lot of those little nibbles!
For one small bruschetta with about 10-12 slices you will need:
Garlic butter
50g butter
4 tbsp Bertolli Oil
2 garlic clove, chopped
½ - 1 tsp salt
and some pepper to taste
Topping
125g buffalo mozzarella
~150g cherry tomatoes
1 tbsp Olive Oil
1 tbsp thick Balsamic vinegar
15-20 leaves of basil
salt and pepper to taste
1. First preheat the oven to 200 °C upper and lower heat.
2. Cut the bread into 2cm thick slices and prepare the garlic butter while you mix everything together till its soft and
creamy.
or
3. Add butter on top of the slices and leave it in the oven till its golden brown (5-10mins) than add buffalo mozzarella for
another ~2mins till it’s a bit melted
4.During that you can prepare the topping. Chop tomatoes and basil and mix it well with the other ingredients. Set aside.
5. Take out the crunchy slices and add your topping.
6. Serve directly.
Those are the ingredients I used for my personal bruschetta! I try to keep it as traditional as possible that’s why I used mostly Italian products such as the butter, mozzarella and my all-time FAVOURITE balsamic vinegar! Serious you must try it! I prefer small cherry tomatoes because the taste is more intense and you have less juice.
