Finally got around to some cooking over the season. Yesterday. I made some ackee & Saltfish with potatoes and some Japanese yam thingy called Sato imo. you probably know what I’m talking about.
I was trying to do one of those 1 minute cooking videos as I really think they grab attention and make great content. Oh and it’s very easy to digest ( the ackee and the video) .The video didn’t turn out bad..... not great either... granted I didn’t use any lighting or special deco. ( lighting alone would make a world of a difference.)
The ackee & saltfish goes well with the potatoes and yams ( taste & texture). Makes a good meal for breakfast, lunch or dinner. I had this as a late lunch. My boys wouldn’t touch it. They just ate the yams😂😕
Now I didn’t want to turn this into a recipe post but .... It only makes sense.
Ackee & Slat-fish with potatoes and yams DMILLIZ style
Serves 4-5
What you will need
- 1 medium sized onion ( chopped )
- 2 pegs of garlic ( optional I didn’t use it )
- 1 large tomato ( chopped into small pieces )
- 2 stalks of scallion ( chopped )
- 1 can of ackees
- 150-250 grams of salt fish
- 2 small green peppers ( sliced and diced )
- 1 Red bell pepper ( optional , I didn’t use it but it gives the dish good color).
- 3 potatoes
- Some yams ( any yam from any country will do- the amount is up to you )
- scotchbonnet peeper ( optional , I didn’t use it 😁)
- A tablespoon of black pepper
Directions
Boil the salt fish for about 10 minutes ( depending on the salt level, saltier fish can be boiled longer ). After boiling , break the salt fish into small flakes and find the bones. Take em out unless you're a cat lol.
Next , place the yams and potatoes in the same water the fish was boiling in.
Heat a frying pan with coconut or olive oil. Place the onions, scallion, garlic and tomato in the heated oil and listen for that sizzle sound.
Stir gently and smile for a few minutes as you are almost there.
The last thing to add is the canned ackees. Open the can and drain it. Place it gently in the mix of herbs and spices. Stir gently and smile again as the ackee is already cooked and will only take about 3 -5 minutes to be ready. ( low heat is best ). Add the black peeper if you wanna spice it up. If you are a peeper lover you can add some scotch bonnet pepper sauce or the peppers itself. If you have the pepper itself, dice it and stir fry with the onions, scallion, garlic and tomatoes.
Peal the potatoes and yams and serve.
Yup! It was tasty. Maybe it will take another year for me to make ackee again.... who knows 😁. I actually plan on doing some food experiments in 2020 mixing Jamaican and Japanese cuisine.
