. In this last week we're supposed to share our favourite healthy recipe again. You can read about it and also you can join if you want by reading this post.
For my first entry within this week, I choose to share with you my beloved recipe of Bruschetta. I realy want to share with you this recipe because there's no week passing and not have this super easy to make Bruschetta with cherry tomatoes, rucolla and bellows cheese.
Firts, let me tell you a few words about bellows cheese or "burduf cheese"
It is called sometimes the Quenn of the Romanian Cheese and is one of the oldest Romanian traditional products, especially for the mountain areas in southern Transylvania.
This cheese is made from cow’s and sheep’s cheese kneaded with salt and kept in different containers.
I love this type of cheese because it is really really creamy and fluffy! Not to mention that is is DELICIOUS!!!!
These are the ingredients:
- cherry tomatoes
- rucolla
- graham bread
- cold pressed pumpkin oil ( but you can use also olive oil)
- bellows cheese (or any chesse you have or like)
- garlic
- spices: dried oregano, salt and black pepper
And this is the Method:
1. First, wash the rucolla and tomatoes and set the cheese aside until you need it.
2. Cut in pieces the tomatoes and garlic.
3. Mix until combined well the cherry tomatoes, garlic, the three spices and a spoon of pumpkin/olive oil
4. Toast the bread
5. On the toast put some oil, the mix of spiced tomatoes, rucolla and the cheese! and you're DONE!!
I consider this recipe a healthy one because:
- it has the veggies
- the garlic witch is a natural antibiotic
- the cold pressed oil has many healthy benefits on your blood vessels, the brain,skin and heart (it has anti-inflammatory properties, it is a powerfull antioxidant and is rich in healthy fatts)
- and you got yourself enough protein/meal because the bread and the Bellows cheese
