So, my stove plates keep shorting my power (grrr)... so until my brother can come fix it next week, I have to use the oven... so I decided to do a beef pot roast. I have the most amazing cast iron pot which can go into the oven up to 170 degrees Celsius.

Pot roasts are wonderfully simple. I threw the roast into the pot along with some onion, garlic, fresh thyme, carrots, sweet potato, chutney, stock, brown onion soup, red wine, salt, pepper and seasoning and water. Popped the lid on and that's that for 2.5hrs at 160 degrees. Nothing beats a little comfort food on the weekend! Cheers to that! 🍷👌😉 Hope you are all having a super Saturday!
