I havn't participated in a while mostly because of getting a job and moving. We are slowly settling down and today I decided to go for it since I love the theme of mini sandwiches. Everything small is cute.
I have gone with a beet burger since I consume only plant based foods.
The buns were made with flour, yeast, olive oil, salt, sugar, and cornmeal.
The beet burger patties were made with beets, garlic, green onion, salt, pepper, lemon juice, onion powder, chickpea flour and buckwheat flour.
The patties were slightly sauteed and then put in the oven.
For the toppings I made a vegan cheese sauce with soft tofu, nutritional yeast, salt, lemon juice, pepper, paprika, tapioca and onion powder. It was thickened on the stove. It tasted a bit like what I remember of cheddar.
Another topping was salsa which was made with tomatoes, peppers, jalepeno, onion, tomato paste, salt, lime juice, vinegar, oregano, and sugar.
The final topping to prepare was chopped spinach sauteed with green onion, salt, pepper, olive oil and lemon juice.
The final topping was watercress which I've been getting into lately.
This was a small side plate approximately six inches.
