Who would ever have thought that something like a Sandwich Contest could have helped so many people here on Steemit?
Trying to think of a different sandwich each week is not always easy, but thankfully granny Google overflows with inspiration and one idea often leads to another!
I decided to make a little loaf of bread in a tin and use that to make a hollowed out sandwich - anyone remembers the Spicy Bunny Chow I made some time back?
My new version - Tin Bread Beans & Fish Bunny Chow. Delicious spicy Beans & Fish Curry as the filling, the scooped out soft spongy bread is ideal to mop up the curry gravy. This one had such a huge 'hat' that I hollowed that out as well and filled it.
I will quote from my old post to explain just what a genuine Bunny Chow that hails from Durban, South Africa, is:
Legend has it that Bunny Chows originated when migrant Indian sugarcane workers needed a container to carry their lunch to the sugar plantations, and a hollowed out loaf of bread was ideal to hold their vegetarian curries. The cut-out piece was used to make a 'lid'.
INGREDIENTS
- White bread Dough - Flour, Salt & Yeast
- Empty food cans
- Sesame Seed - optional
- Curry spices - Cumin (Jeera), Coriander Powder, Masala, Turmeric, Star Anise, Cassia/Cinnamon Bark
- 1 Onion diced
- 1 can Pilchards in Tomato Sauce
- 1 can Chick Peas
- 1 can Baked beans
- Dhania & Curry leaves
Super fragrant Beans, Chick Peas & Fish Curry made in a jiffy.
Bread dough was divided and placed into well sprayed regular size food cans - optional to sprinkle Sesame Seed into base and onto sides of cans.
The balance of the dough was used to make a divine plaited Cheese Bread.
Simple concept - top of bread is sliced off and the remaining is hollowed out and filled with the spicy Curry.
