Baby Bird and family are doing fine, time for us to head back home. It has been such an amazing visit. First grandson is born, celebrated Father’s day (first for son-in-law!), they sold their home and will be moving west in a month! Whew! Glad we could be there to help them through this crazy time.
All is well now…so off we go!

I made sure I left some healthy goodies behind (yes and chocolate too!) I’ll be sure to share them with you over the next few days. But before we leave, I wanted to make a sweet breakfast with you all!
I have always loved English Muffins, especially sourdough…I am working on that recipe and soon will have it to share. Today I have another English Muffin recipe which I think you will like, AND a recipe for a delicious fruit topping! I’ve added a bit of flax to the muffins…extra fiber when traveling always helps! Good for the digestion!
Lets make English Muffins with Blueberry Compote!
Muffins!
These are sooo easy, you’ll ask yourself Why haven’t I made these before?
Ingredients
Makes 6 English muffins
1 2/3 cup rolled oats
5 tablespoons chia seeds
2 tablespoons flax
2 ½ teaspoons baking powder
1 ¼ cup unsweetened applesauce
¾ cup coconut or almond milk
½ teaspoon salt (optional)
Preheat oven to 350 degrees
Place oats, chia seeds baking powder and salt in blender. Blend until finely ground
Transfer to bowl and add applesauce and milk. Stir well
Press into ramekins and flatten
Bake for 20 minutes or until golden and inserted toothpick comes out clean!
Now while you are baking the Muffins, Start the compote!!!
Ingredients
1 cup blueberries
1 tablespoon Chia seeds
2 tablespoons Maple syrup
Place all in saucepan. Bring to boil and simmer until thickened. Generally this is about 15 minutes.
At this time your Muffins should be done!!
Take them out of the pan, slice like a muffin! Add a little non-dairy butter of your choice, the Blueberry Compote….Yum!
And Voila!
I have to say, Mr. Bird gave it a 10!
