This is a staple food in Thailand that's commonly eaten with rice as the main topping with a fried sunny-side-up egg for lunch. Today I made it with ground chicken but it can also be made with ground beef or pork. There's also the option of making it a little dry to eat as an appetizer style dish, great for social gatherings.
I didn't make it too spicy today but it's normally stir-fried with a few chilies. This is a dish I make often because it's easy and quick. It's also the dish that I think of when I'm traveling because the whole country knows how to make it.
