Phanaeng curry was one of the first Thai dishes I fell in love with when I was young. I remember traveling to the Thai temple in North Hollywood on Sundays, just to get some phanaeng curry over rice & some Thai BBQ chicken. This must have been my late teens and once I got to Thailand, it was only a matter of time before I knew how to make it. This red curry type dish is bursting with savory flavors with hints of peanuts.
This dish is normally eaten with rice and is not too spicy. The spiciness level reaches medium so if you're used to eating spicy foods then no problems. If you aren't used to spicy foods then this may make you sweat a drop or two. The coconut cream used adds the Thai signature taste and brings a tropical aroma to this delicious dish.
