Energy balls are the perfect quick and easy snack. Not only are these energy balls healthy but they have a sweet, chocolatey and rich taste. Made with minimal ingredients, you can make these raw energy balls in 10 minutes and can snack on them guilt-free.
Ingredients
For the balls:
- 1 cup Medjool dates
- 1 tablespoon raw cocao powder
- 1 tablespoon hemp seed protein powder
- 1 tablespoon coconut oil
- 1/2 cup oats
- 1/2 cup raw cashews
For the ganache topping:
- 2 tablespoons coconut oil melted
- 1 tablespoons raw cocao powder
- 1 teaspoon maple syrup optional
desiccated coconut
Instructions
Make the balls:
Place the nuts into your food processor and process quickly to break them up
Add the rest of the ingredients for the balls and process until you have a mixture that can easily be formed into balls
Form the balls and place them in the fridge to cool down while you make the ganache topping
Make the ganache:
Add the melted coconut oil and cocoa powder together and whisk until smooth. Add the maple syrup here if you used it.
Coat the energy balls in the ganache and place on a plate. Sprinkle some desiccated coconut over the top while the ganache is still wet.
Place the balls in the fridge and snack on them whenever the craving arises.
The energy balls can be stored in a closed container in the fridge for up to 10 days
