If any of you have been following my journey for anytime, you may know that I eat vegan. I have chosen this for the last nearly two years, and meat free for the last 7 1/2. It has changed my life, but there are some tricky sides to eating vegan. Vegan junk food....
That's right, not all vegan food is good for you. So today started off great, with a little vegan junk food. One of my favorite dishes, fried potatoes.
It was a combination of yukon gold and russet potatoes, and a sweet onion. It was all fried up in olive oil, himilayan pink salt, and black pepper. No potato is complete without some ketchup!
