Today I have a promised recipe for an express cake for you.
The cake is:
- quick and easy to prepare
- delicious
- vegan: dairy, eggs, honey free
- gluten free
- without added sugar
Unexpected guests? You don't have time to prepare a dessert? I will tell you what products I ALWAYS have in kitchen cupboards (fridge or freezer), so in a dozen or so minutes I can make a delicious and most importantly 100% HEALTHY dessert:
- dates, fresh or dried
- unrefined and refined coconut oil
- bananas, fresh or frozen
- flours: oat (or oatmeal to be ground), maize, buckwheat, but also rice, millet, chickpeas and amaranth
- vegetable milk
- millet and unroasted buckwheat groats
- cocoa, carob, cinnamon, baking soda - this is always useful for desserts
- good quality dark chocolate (90% cocoa) or chocolate drops for baking
- peanut butter, almond butter or tahini
- seasonal fruits, now I have them in the garden, in winter in jam or in the freezer ;)

Ingredients:
- 2 large ripe bananas
- 1 tablespoon of coconut oil
- a handful of dates
- 1 1/2 cups of oat flour gluten free
- 1 tablespoon of carob
- 1 teaspoon of baking soda
- 1/2 cup of oat milk
- 50 g dark chocolate or chocolate drops
- 3 tablespoons of peanut butter
- a handful of blueberries, wild strawberries, raspberries or other seasonal fruits
Preparation:
1. Soak the dates in warm water for 30 minutes. *
* When you have really little time, you can soak the dates in hot water for 15 minutes.
2. Put the peeled bananas, soaked and drained dates and oil into the bowl and blend it.
Then pour the flour, baking soda and carob, mix by adding milk. At the end, pour the chopped bitter chocolate, mix.
3. Pour the dough into the baking tray. My tray is in size 30 x 30 cm.
Bake a cake for 45 minutes in 180 degrees.
4. After baking, spread the hot cake with peanut butter.
Decorate with fruit and let it cool. Cut into squares.
