Happy Fruit and Veggies Monday. Here’s a delicious, nutritious, and filling salad with a tangy salad dressing! This salad is 100% plant-based and will have you feeling rejuvenated as heck. I typically add quinoa and roasted chickpeas to my salads, (truly try adding them to yours! they’re yummy and super filling), but I was hella full from a day of eating (pigging out) on vegan deliciousness! As a way to cleanse my body after eating tons of junk food, I made this salad. I added kale, some romaine, cherry tomatoes (I could live off of this ish ya’ll), radishes, cucumbers , mixed nuts, and chia seeds (for em healthy fats n fiber)! On the side, I made a simple yet literally the best thing in creation because it goes with everything, a dressing using maple syrup and djion mustard! Have a great week!
