1 Sweet Potato (sliced a thinly as you can, use a processer or mandolin if you have one)
1/2 Cup of Coconut Oil. (you can use other oil if you don't have coconut)
Heat the oil in a small frying pan until bubbling, then lower the heat - the oil needs to be 1cm deep to fry the slices properly
Next, add the slices, try not to let them overlap, cook in small batches for 5 or 6mins turning once with a tongs!
you will know when they are done, the edges will curl up a little. Remove form the pan carefully as very hot indeed!
Pop them onto some kitchen paper to get the excess oil off and your done! Once these bad boys are cool they are crunchy and you'll wish you'd made more! Beetroot chips are equally as delicious too.
