This is a very significant dish known as Yu Sheng. It is Raw Fish Salad. This is used as Lo Hei, Prosperity Toss especially at Reunion dinner where all the family members will gather together and have this Prosperity Toss for Good Luck, Good Fortune, Smooth Sailing in what ever one undertake and good health.
The ingrredients for this dish are shredded white radish, shredded carrots, shredded colored ginger, (red and green), pomelo peel, shredded cucumber, shredded pickled leek onions, crushed nuts and crispy crackers.
The waitress will say all the good auspicious phases as she starts putting the raw salmon on top of all the shredded ingredients. She then added the 5 Spices, pepper, plum sauce and lime on the raw salmon. She will add the crispy crackers and then let the diners do the tossing.
This is an expensive once a year dish. Even though the ingrdients are just mainly vegetables and the only expensive item is the Salmon. It is priced between $68.00 - $188.00. For good luck nunber, this dish will end with an "8". Some restaurant will use abalone instead of Salmon.
