The weekend is finally here, and I finally get to spend more time cooking in my small kitchen. After my much-needed body massage this afternoon, I went to get some fresh ingredients for my dinner tonight. Tonight's menu is my own twist on the Honey Garlic Chicken Salad. This dish will not take a long time to prepare and cook, and most of the ingredients may already exist in your kitchen cabinet and refrigerator. So, let's dive in!
Ingredients:
- 3 small pieces of chicken breast fillets
- Salt
- Pepper
- 1 tablespoon of Paprika spice
- 4 cloves of chopped garlic & 2 crushed garlic cloves for marinating
- 1/3 cup of honey
- 1/4 cup of water
- 1 tablespoon of vinegar
- 1 tablespoon of soy sauce
- Olive oil
- 65 g of diced avocados
- 100g of Romaine lettuce salad
- 50 g of cherry tomatoes
- 4 tablespoons of lime juice
*Please change the above measurements to suit your taste palette. :)
Steps:
- Season the chicken breast fillets with salt, pepper and paprika spice.
- Add some crushed garlic in it, and leave it aside for some "marinating" time.
- Meanwhile, dice the avocados and place them in a bowl.
- Rinse the cherry tomatoes and Romaine lettuce salad, and place them in your serving plate.
Steps:
- Heat your cooking pan over a medium heat.
- Sear the chicken breast fillets on both sides until golden brown and cooked through. Flip it about every 4 minutes.
- Take it out and leave it on a separate plate.
Steps:
- In the same pan, stir fry the chopped garlic with some olive oil until fragrant.
- Add the honey, water, vinegar, lime juice and soy sauce.
- Increase the pan heat to medium-high.
- Add the chicken breast fillets and continue to cook until the sauce reduces down and thicken slightly (about 5 minutes).
Steps:
- While your kitchen/room smells delicious, do a quick taste to check if you like the final flavour. Adjust until you are satisfied with the flavour. Perhaps a little more honey, lime juice, or water.
- Time to assemble your honey garlic chicken salad! Slice the chicken breast fillets, and drizzle the honey garlic sauce over it, and some hints on the salad greens.
- Remember to add your diced avocados!
- AND YOUR SALAD IS READY! :D
