So as I mentioned yesterday - today's meal is absolutely IDEAL if you are feeling super lazy, which I most definitely was on Saturday because I had had my family over for my PIMP'D BANGERS AND MASH which if you have had a look at the post, would know that it was aweosome - and so was the company... and the wine haha - so we all had a bit of a late one, hence my exhaustion the following day and the dire need for something easy in the kitchen.
#WhatsCookingChallenge - One Pot Rosemary Chicken

This really is the simplest dish EVER but does not lack at ALL in deliciousness! Ok, so - your fundamentals needed are:
A pack of chicken drumsticks and thighs
A pack of baby marrows
One onion
Crushed garlic
Fresh Rosemary
Salt and pepper to taste
Chicken seasonings of choice
Rice (I used basmati)
Chicken stock
Preheat your oven to 180 degrees Celsius
This REALLY is a "one pot" dish,
except for the fact that I still prefer to sauté the onions and garlic
in a pan first because somehow the dish lacks that special something
if you simply throw the onions in raw...
however if you can't be bothered to sauté, then don't let me stop you...
haha ok, but for this instance...
dice your onion and then pop it into a pan with the garlic and some olive oil
and fry them until slightly golden.
while the onions and garlic are busy,
get out an oven dish and pour a cup of uncooked into it...
As mentioned, I used basmati rice, simply because I prefer it.
Once the onions and garlic are ready,
scatter them over the dry rice
and then add about a litre of chicken stock to the dish.
Next,
finely chop a few sprigs of fresh rosemary...
Put your chicken pieces into a mixing bowl,
add some olive oil,
the chopped rosemary
and whatever other chicken spices take your fancy,
and then give it a good massage :)
Then take the chicken pieces
and place them on top of the rice and stock.
I then added whole baby marrows as well.
Then stick it in the oven for an hour and you are done!
It realy could not be any simpler in my opinion lol...
meat, veg and rice all in one go :)
and voila!
Golden, crispy, juicy deliciousness,

then this is going to be RIGHT up your alley :)
