Sometimes it is the simplest things that are the tastiest!!!
The other night I decided to do a flat pork belly roast...
which is as simple as pie really!
#WhatsCookingChallenge - Pork Belly Roast with Sweet Butternut Mash, Fine Green Beans and Beetroot Juice.

You simply score the roast,
or better yet, get your butcher to do it for you.
Then rub it in some olive oil,
salt and pepper
and then pop it into a the oven
Cook it at 180 degrees Celsius for 2 hours 15 minutes,
then turn up the oven to to 200 degrees Celsius
and cook it for another 35 minutes
to get the crackling nice and crispy!
You could honestly serve this with anything your heart desires,
as pork pretty much compliments anything,
but I served it with a sweet butternut mash,
fine green beans and a little beetroot juice!
And don't be fooled...
The portion size may appear small, but pork belly is incredibly rich,
and coupled with the crackling,
you really don't need a large serving.
It was a simple but exceptionally tasty plate of food indeed!
