Whats up everyone.
Tonight I made an awesome dish with Aubergine. Or Eggplant as its called in the colonies.
First thing I do is cut the eggplant in about 1cm thick slices, and roast them until sorta tender and soft. Then brown some ground beef.
Then cooked down some spinach and Arugula.
Now I just layer sauce, eggplant, beef, cream cheese until the dish is full.
Now I topped with shredded cheese and baked for about 45 minutes.
I've done this similar recipe with ground chicken, and I'd say its just as delicious.
