Have you ever had Elote? Mexican street corn to be exact. With Houston being the multicultural metropolis that it is, there are only a handful of what I consider to be tickets to Elote paradise. So I decided to make my own. Granted, it will never taste as good as the wizards at the Elote shops, but it's getting better every time.
Here's a peak into last night's attempt:
I used standard yellow corn, the best is white corn, but also hard to find:
I cleaned the corn and popped them into my Instapot. The best Elote is grilled in a cast iron rolling grill like one of these bad boys:
But that doesn't fit in an RV, so I used this little guy:
4 ears of corn
1 1/4 cup of water
Manual pressure cooker for 8 minutes
Then I made the cream mixture, mixing Mexican crema and a bit of mayonnaise with salt, onion, and garlic powder to taste:
I crumbled queso fresco to shimmy on top:
When the corn was finished cooking, I buttered it, slathered it with cream, sprinkled the cheese, and dashed it with chili powder.
The end result was delicious!
