Hi everyone! Today I am going to share how to make easy ice creams or rather ice lollies to help us cope with the hot weather. I live in a tropical country and the last few days were very warm at 32 degrees Celsius. This is the highest I have ever seen on my little clock that tells me the temperature. So my mother and I thought that it will be great to make some ice creams to help us cope with the weather.
Ingredients and Materials
These are the things that we need to make this ice cream. The portions depend on how you would like your ice cream to be and how many you would like to make.
This is some boiled water that has been cooled. It is best to make this ice cream with boiled water because only then it turns out soft. Otherwise, the ice cream will be hard.
This is some cordial juice in lychee flavour. You can also use fruit juice if you like. An optional ingredient is sugar syrup. If you would like your ice cream to be sweeter then you can add a small amount of sugar syrup.
These are salted dried fruits to give colour and flavouring.
These are the ice cream packets to put the ice cream in. There are two types. One has a partition in the middle while the other type which is this one is a little shorter and has no middle partition.
Method
A) Lychee Ice Cream
First of all, mix half of the lychee cordial juice with half portion of water. In other words, the ratio of lychee juice to water is 1:1. The juice that I had at home is diluted but I have come across juices that are thick. So, please add the amount accordingly. You can test the taste of the mixture and see how you like it before proceeding. Then, open the ice cream packet like this.
Pour the ice cream mixture into the packet using a spatula like this. Be mindful not to fill the packet all the way to the top and leave around 2 inches empty on top.
Then, tie the edge of the opening into a knot. Make sure that it is tight.

Here are the lychee ice creams ready to be frozen.
B) Dried Fruit Ice Cream
The orange ones are made of salted dried fruits. The method to make these is simpler. Just pour water (boiled and cooled) into the packet with a space around 2 inches on top. Then, drop a salted dried fruit into the mixture. The fruit will give the ice cream an orange colour like you see in the picture above along the taste of the fruit as well.
Then, put the ice creams in the freezer for a day. They will harden the next day and can be eaten to make your hot day better.
I took this last picture on the next day when I was eating the ice cream. It was so soft like icy cotton! I think it is due to using water that was boiled earlier. I could bite the ice cream easily.
While my ice cream doesn't look exactly like this, it is still an ice cream that I enjoy :D I am not sure if this type of ice cream exists anywhere else but it is a common type of ice cream here. Thank you for dropping by and I hope that you have a fabulous day ahead!
