I had tasted fried duck two weeks ago at a famous restaurant in Indonesia that is "Bebek Goreng H. Slamet". This restaurant is well known for having its own way in serving duck with a distinctive flavor.
To me this fried duck is very tasty and delicious, maybe they slaughter the duck of good quality.
To improve the taste quality they selected the old duck is a duck that has been laying eggs four times in two years, why do not they slaughter a young duck? Because the young duck's meat will be easily destroyed when boiling.
Another secret was made the duck too delicious and crisp is they boil it for 3-4 hours, so the meat becomes tender and spices easily absorbed when fried.
After the frying is complete then the Chili grind will be a mainstay for the duck. This sauce was made from chilli, salt and garlic which grinded then doused with hot cooking oil into it. It taste is spicy and contains the aroma of duck because the oil is poured is a former of duck frying.
