Number of cooking and eating hot soup increased these days. I sometimes worry about intaking too much sodium, but it can't be helped because of cold weather. I try to cook with less salt than usual. The food in the picture called Kalguksu was made with noodles and beef soup. The flavor of this food is very nice.
Let's make the noodle soup!
You need some vegetable. Do you want to add another vegetable? Why not?
When you add more vegetable, think about adding more water too.
I used beef soup ' gomtang' that you are able to buy at any Korean grocery store.
If you don't have the ingredient, make it yourself.
Soak beef in cold water for about 20 to 30 minutes. Wash the beef in cold water too, and add in the boiling pot. The taste will be little different, but it'll be good too.
The noodle I used is very nice, so tender. Almost every Korean grocery store has the kind of noodle. If you don't have, you also can use udon noodle. If you can, make the noodle by yourself. First, mix flour and water to make dough as you make bread. Dust work surface with flour and roll out the dough. Cut them as noodles in the picture.
Pour water and gomtang into the pot. When it's boiling, add noodle. Turn down the heat to medium.
Add vegetable and salt, lower the heat again in 5 minutes. Let them simmer more minutes. If you want, add green onion and one garlic crushed too.
Done!!
It's getting colder. It's always nice having my warm noodle soup for me now.
