I had a hankering for chocolate cookies at the weekend, so decided to bake a fresh batch.
This particular recipe is courtesy of the incredible book, Veganomicon.
Ingredients:
- 2 Cups of plain flour
- 2/3 Cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 Cup rapeseed oil
- 1 1/2 Cups sugar
- 4 teaspoons ground flaxseeds
- 1/2 Cup soy milk
- 2 teaspoons vanilla extract
- 3/4 Cup vegan chocolate chips
- 3/4 Cup chopped walnuts
Add the oil, milk, sugar and ground flaxseed together.
Mix until fully combined.
Sieve the flour, cocoa and baking soda onto the mix and stir in.
Add chocolate chips and chopped nuts.
Using your hands roll small balls of the dough and place on a non-stick baking tray. Bake for 10 minutes in an over pre-heated to 350F.
This recipe is incredibly simple and very versatile. Try adding orange peel or other flavours to this base recipe to completely change the taste.
