Ingredients:
5 packs Ramen Noodles (any flavor, I don't use the packs of spices, they are too salty)
1 Tablespoon of butter
5 Eggs
2 Tablespoons of olive oil
4 cloves of garlic, minced
1 small onion cut into thin slices
1 teaspoon of crushed red pepper flakes
2 cups of frozen mixed vegetables
1/4 cup of low sodium soy sauce
Place 6 cups of water in a pot and start to bring the water to a boil. Season the eggs with a little salt and pepper, place butter in a medium fry pan over low heat for 1-2 minutes, add the eggs, scramble the eggs once fully cooked.
Place the noodles in the boiling water for 1 minute and then drain and discard the water.
In a stir fry pan over medium heat, fry the garlic, onion and crushed red pepper in the olive oil for a few minutes and then add the frozen vegetables and stir fry for about 5 more minutes.
Add the cooked, scrambled eggs, cooked noodles and soy sauce. Turn the heat to low and cook for a few more minutes.
Makes about 4 servings. Enjoy your quick, healthy, inexpensive meal!
