As a Peruvian, Chinese food was a huge part of my life growing up, specifically, a Chinese-Peruvian fusion called “Chifa”. One of its main dishes is called “Chaufa”: a Peruvian variation of Cantonese fried rice and one of my most favorite dishes in the world. I’ve made about a dozen versions of it, keto-fying it and making it my own. Here’s one of the earlier versions where I used green beans as a rice substitute and pork belly instead of the usual chicken. I’ve dabbled with plenty of other rice substitutes but I really liked how both the flavor and texture of the green beans played off the pork belly’s crispy-ness. I think I made this exact dish over and over for an entire week because nom and burp 🤷🏻♂️ 🤤 Have you ever made anything like it?
