Today I'm going to talk about a vegetarian dish that I've recently cooked and was really delicious: wholemeal pasta with broccoli, leek and parmesan. This recipe is really simple and can be prepared quite quickly.
Ingredients: (for 2 people)
- 1 broccoli
- 1 small leek
- 200g of spaghetti
- oil
- salt and pepper
- parmesan
Directions:
- Clean the broccoli and cut them in pieces.
- Remove the green part of the leek, then slice the white part thinly.
- Put the oil in a pan together with the sliced leek and fry over high heat for two minutes.
- Add the broccoli and continue frying over high heat for other two minutes.
- Lower the heat, cover with a lid and cook for another 7-8 minutes.
- In the meantime fill a pot with water for the pasta and bring it to a boil
- Add salt and pasta and cook following the instructions on the pasta package you've decided to use. Drain it a few minuted before what's written on the package.
- Add pasta and a few cooking water spoons to the broccoli, so that it does not dry out and mix.
- Add some salt, pepper and parmesan cheese.
