I know during the summer many people don't think of soup for anything because it is so hot outside. Personally I just love soup! Not to mention cabbage is now coming out in full force and what a great way to eat it! I start off in my cast iron dutch oven... I love cast iron! You don't have to use it but the taste to me is so much better. Ok... so put an oil of choice in the the dutch oven (I used a lemon coconut oil), while this gets hot I cut an onion into bite size pieces and throw it into the hot oil. Reduce your heat to medium now. Next, I add cut up cabbage into the pot (for a family of 4 a half of a cabbage is plenty). Follow with some carrots if you would like (I didn't have any but they taste good in it). Add 2 cups of vegetable or chicken broth and 2 cups of water. Cut up the polish sausage ( I used a package of the Teton Waters which I included a picture of) into bite size pieces and throw it in the pot. Now add some salt, pepper, a little cajun spice is great... I do not post how much spice to use because honestly it is up to your taste buds. If you don't have issues with butter, you can use some. I use Kerrygold grass-fed butter. Let this cook for about 30 minutes. Oh and if you feel it needs that little bit of an acid taste...haha you guessed it ... coconut vinegar!
