School is now in session and my life gets busy! I always try to eat around 6 but sometimes that means a quick dinner. Fast food isn't the answer, especially if you are wanting to stay on the healthy side of things. This is the time of year that fruits and vegetables start becoming abundant. Just remember not over buy because you don't want money going into the trash can because you let the veggies spoil.
Here I put a green pepper cut into bite size pieces and sauteed it in coconut oil on medium heat, then added mushrooms, and a bunch of kale on top and cooked it until soft. Add spices of choice...personally I went with garlic powder, salt, pepper, and my favorite coconut vinegar.
Now I was looking for quick so I had halibut in the freezer and it thaws fast in water. Remember I don't use a microwave! I fried it in a skillet and served it with avocado. You don't need rice or potatoes every night!
