After Easter holidays that we ate every animal possible and in extravagant quantities it is time for something more healthy, right?
And what better than some fish and salad.
Fish is in fillet form and to be honest I am not aware of its name. Not that it matters. They all go to the same place.
For salad I had a collection of fresh leaves and some tomatoes.
And you need a dressing for the salad. I used cream cheese and crated white cheese ( myzithra ) , that also plays the role of salt. Yes, I don’t use much salt in my cooking. There is so much salt hidden in the foods that we eat, so we don’t actually need that much extra. Just a little bit to bring out the flavor of certain foods.
Back to the dressing. I also added dried oregano, that is plenty in Greece and curcumin despite its bitter taste because it is the most potent antioxidant known to man. And of course don’t forget olive oil also plentiful in Greece.
Preparation is quite easy. You add little bit of salt, pepper and oregano to the fish and put in the oven for 10-15 minutes and while it is being cooked you wash the veggies and add the dressing.
I had one barley toast instead of a bread. They are tastier than I thought.
Try this meal and tell me how awesome it is.
It is a complete meal. You have quality protein from the fish, lean carbs from the veggies and healthy fats from olive oil and fish.
