We all have to eat veggies, but veggies are not as exciting as a juicy cut of meat for example. Unless you are a vegetarian, which I am not, so I try to make my veggies as appetizing as I can.
In this recipe, I take a bag of frozen vegetables and turn into a delicious dish.
What you need
We need a mix of frozen vegetables. My mix has rice, corn and peas.
Olive oil and spices.
Included but not limited to salt, pepper and oregano.
Curcumin as it is the most strong antioxidant and since I have rice some curry.
Optional is one sliced onion for the beginning and some grated cheese for the end.
I also bought some porchetta, because I can’t live without meat.
Putting it all together
Put some olive to a non-stick pan and wait until it heats up.
Add the veggies and hear the sound of food being sauted. Cook them 3-4 minutes until they get the right color. Rice should start to be semi-transparent.
Now add a little bit of water depending on the texture of the food you like. I don’t like soups so I added 50 ml of water. Water is necessary for the rice.
Then we have our spices. Salt, pepper and oregano are the stables.
Curcumin and curry are the secret sauce. The moment to put these ingredients your food goes to another level. The kitchen is full of smells. Smells of the East.
And colors. Notice how the color changes when you add these spices. The fiery red makes a perfect contrast with fresh green of the peas and yellow corn, becomes vibrant orange.
Enjoying
Mix and wait 5 minutes for the water to evaporate and serve. This piece of meat you see is called porchetta and I bought it cooked from my local supermarket. In the end, you can put some grated cheese or you have without anything else as it is.
