Cauliflower rice is the perfect "low carb" alternative to normal white rice. You can either combine it with your veggies of choice and your favourite dressing and enjoy it as a raw salad OR you create some fried "rice". I love this dish because it is super delicious, light and quick and easy to make. Enjoy everyone!!!

Ingredients (2 portions)
- 1 large cauliflower
- 2 large carrot
- 100 g corn kernels
- 100 g green peas
- 1 rod of spring onion
- 2 cloves of garlic
- salt, pepper and other spices like cumin or paprika to taste
- handful of freshly chopped herbs like cilantro or parsley
Instructions
- Wash the cauliflower, seperate the florets and process them into "rice" using a food processor.
- Wash/peel and cut the other ingredients.
- Sautée onion and garlic in a pan and then add the cauliflower rice.
- Fry for another 5 minutes and add the rest of the veggies.
- Add spices and herbs and optionally some lime juice.
