Hey lovely Steemian foodies, I hope everyone is doing well. Since you really loved my watermelon shake, I decided to share another super yummy watermelon recipe with you guys. It is a quick and easy, yet super yummy vegan summer salad.
Have you ever tried fruits in your salads? I love adding some melon or berries, since it adds some fresh sweetness to your summer dish. I can only recommend it!

Ingredients (2 plates)
- 300-400 g arugula
- 500 g watermelon
- 1 large cucumber
- handful of fresh sprouts, like alfalfa or mung bean
- juice of 2 limes
- ½ tbsp salt and fresh pepper
Instructions
- Wash and cut arugula, and put it in a bowl.
- Wash and peel the cucumber ( if needed) and process it into noodles using a spiralizer, and add it to the salad.
- Cut the watermelon into quarters, take our the meat and seeds (if needed) and cut into bite-sized pieces.
- Put a handful of the watermelon aside and add the rest to the salad together with sprouts and the mint (keep 3-4 leaves of mint for the dressing).
- Put the rest of the watermelon in a small food processor together with the lime juice and mint leaves and mix until smooth.
- Add salt and pepper to taste and add the dressing to the salad.
