BOEREWORS MEATBALL STIR FRY - QUICK & DELICIOUS!

The other day I was watching an episode from the NEIL ANTHONY “private chef” series – well, actually… let me be honest about that – I was “binging” haha! Anyhoooo, I spotted something that was literally like love at first sight and I decided to put my own spin on it!

Being a mom, I am all for super simplistic meals which are simultaneously tasty and nutritious and going to be enjoyed by my little man. Amidst prepping for one of his clients meals, Neill made some super awesome looking meatballs from boerewors!!! Why did I not think of this before haha! I mean everyone loves meatballs, but as moms I think we roll our eyes at the thought on many occasions because of the effort required. So, the concept of simply squeezing out little bits of the already PERFECTLY seasoned boerweors was like music to my ears and I also just loved the completely misshaped rustic appearance of them too, so I just HAD to give them a try

I grabbed my wok for this one, threw in some olive oil, and squeezed the little meatball sized increments of sausage out of its casing and into the sizzling wok. Cooked those for a good 10 minutes until lovely and golden, removed them, set them one side and threw in some fresh oriental stir fry mix, followed shortly after by some halved baby tomatoes. Fried that up for just a few minutes, re-added the meatballs to get everything to the same temp… and then served it on a bed of lightly spiced cous cous, with coriander based micro-herbs and feta to finish.

I really think a little bit of cubed avo would have been absolutely fabulous too – but I did not have a ripe avo, and like they say – everything happens for a reason… perhaps the avo would have made it just that little bit too rich… because it was absolutely out of this world tasty! The flavour of the boerewors literally carries the entire dish! I am officially in love with this and have already started to contemplate many other variations, including a breakfast one… it’s AMAZING!
