My kids used to be addicted to store bought choc chip cookies with a huge list of unidentified ingerdients. Having slowly changed my family's diet from processed food to homemade organic food, cookies were a must for me to learn how to make. I'm told these were better than their original cookies ;)
Ingredients
For approx 24 cookies
260g organic plain flour
120g organic cocoa
320g organic cane sugar
200g organic raw coconut oil
1 tsp bicarbonate of soda
200g your favourite chocolate
2 large organic eggs beaten
A splash (approx 50ml) milk
Mix together the flour, cocoa and bicarb
In large bowl cream together the sugar and coconut oil. To this add the eggs and milk and mix.
Chop the chocolate into chip size pieces.
Add the dry ingerdients and chocolate to the wet ingredients and mix everything together thoroughly.
Separate into 24 equal sized balls of cookie dough and flatten slightly with fingertips. Allow these to chill for at least an hour. I sometimes freeze a batch at this stage and bake as needed. I find they are at their best when they are warm and gooey fresh from the oven!
Bake at 180C fan for exactly 10mins
As soon as the cookies are out of the oven I like to make them extra chocolatey by pushing a few extra choc chips into the warm dough before they cool.
