Pork Estofado is prepared kinda similar to pork adobo, however, the flavour is sweeter and contains additional ingredients
Ingredients:
- Sliced pork in cubes 21/2 lbs
- 2 medium sized banana preferrably saba, cut it into slices
- 5 tbsp soy sauce
- 1/4 cup brown sugar
- 4 tbsp white vinegar
- 6 cloves crushed garlic
- 1 tsp crushed peppercorn
- 2 cups of beef or pork broth
- 4 tbsp cooking oil
Here are the following instructions:
1 . Marinate the pork in adobo-like seasoning which contains soy sauce, crushed peppercorn, vinegar and garlic for at least 2 hours.
Marinating it long or overnight can add more flavour which means it is more delicious
Heat the oil in a cooking pot, once it is hot, pan fry the carrots for 45 seconds per side, remove it afterwards and then do the same with the banana.Set aside afterwards.
Using the remaining oil, get the marinated por and pan fry it for 2 minutes per side. Remember: you can add oil if needed.
Put the garlic from the marinated pork, stir it and cook for 30 seconds.
Pour the remaining marinade and add beef broth. Let it boil.Steamer for 50 minutes to 1 hour or until the pork becomes tender.
Add brown sugar and stir it. Cook for 15 minutes.
Finally, put the pan friedd carrots and bananas.
