Hey guys,
So this is a bit of a change from the normal posting from me. As tomorrow is mothers day in the UK, my little girl decided she wanted to bake some cookies for her mummy, so her and I took to messing up the kitchen and seeing what we could come up with.
I thought that I'd share the recipe and document with some images. They are absolutely delicious. Not sure where we got the recipe from, but they are stated as the "Best Chocolate Chip Cookies in the World". Cannot argue with that.
So the first ingredient is an enthusiastic helper....
This provides all the cuteness you require for this recipe. The rest of the ingredients are as follows.
9oz light brown sugar
9oz white sugar
10 softened butter (the proper stuff)
2 eggs
12 oz chocolate or chocolate chips (chocolate bar cut up is best for that chunky-ness)
1 tsp vanilla essence
1/2 tsp bicarbonate of soda
1/2 tsp salt
18oz plain white flour.
So you have all your ingredients littered around your kitchen. Now it's time to get as messy as you can.
Firstly, put your oven on 180c and get it warmed up. You'll also need some lightly greased/buttered baking sheets
- Mix the butter with the two sugars - I use our Kenwood chef.
- Next, if you are going for chocolate chunks, roughly chop up the chocolate.
- Add the eggs, chocolate chunks and vanilla essence to the butter and sugar and mix till well combined
- Mix the bicarbonate of soda with the salt and flour and then stir into the wet mix to form a cookie dough.
- Roll the cookie dough into golf ball size bits, put them on a greased baking tray with a bit of room between them and squash them down slightly.
For a squidgy centered cookie, bake for 10 minutes. If you like em crispy throughout, 12-14 should be enough. Once they are done, take them off the baking tray after cooling for 5 minutes and put them on a cooling rack.
Don't eat them all at once!!
