How are you all? I haven't posted in a while so today I'm going to tell you how to make a pineapple upside-down cake! It's really easy and only needs 6 ingredients. So lets get started...
Here's what you'll need:
4 tbsp of golden syrup
110g/4oz sifted self raising flour
110g/4oz caster sugar
1 can of pineapple rings (drain before using)
110g/4oz softened butter
2 eggs
And here's what you do!
- Preheat the oven to 180c/350f/gas mark 4
- Grease and line a 20cm/8 inch square tin
- Spoon the golden syrup into the bottom of the tin (don't worry about spreading it around as it will do it itself while cooking) then place as many pineapple rings as you want on top of the syrup.
- Then in a bowl mix together the butter and sugar until light and fluffy, add in the eggs one at a time with some of the flour bit by bit.
- Spread the mixture evenly onto the pineapple and bake for about 35 minutes until firm and golden.
- Leave it in the tin for a few minutes then turn it upside-down and serve it hot or cold with custard or cream!
