Earlier this week, I made a superfood "breakfast sundae" from all-natural, plant-based ingredients. It's vanilla chia oatmeal layered with warm mashed blueberries and whipped frozen banana + raspberry as a kind of ice cream on top. Amazing! In all, it's packed with nutrients and is the perfect way to start your morning. I wanted to share this photo in the #foodphotography contest and I've also attached the recipe below if you're interested in making this. Enjoy!
The Recipe
Ingredients:
- 1 cup rolled oats
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1 serving stevia (optional)
- 1 cup non-dairy milk + some water
- 1 cup frozen banana (cut into rounds)
- 2-3 tablespoons frozen raspberries (or other fruit)
- 1/2 cup blueberries
- 1 teaspoon chia seeds
- 1 tablespoon walnuts, for garnish
- 1 tablespoon cacao nibs, for garnish
Prep: You’ll need frozen bananas for the nice cream. Take a few ripe bananas, peel and slice them into thin rounds and freeze overnight in a bag or sealed container.
Step One
Make some oatmeal! Adding vanilla, chia, and stevia can really kick up boring rolled oats… In a saucepan, simply combine the rolled oats, chia seeds, vanilla, stevia, and non-dairy milk. Warm over medium heat for about 8 minutes and stir regularly. Add as much water as needed to achieve your ideal oatmeal consistency.
Step Two
While the oatmeal is cooking, make the nice cream. Simply pop a bunch of the frozen banana slices (thin slices are really important) into a food processor with a few frozen raspberries (other frozen fruit like strawberry or pineapple would also work) and pulse repeatedly, scraping down the sides until it’s totally smooth and the consistency of soft serve ice cream.
Step Three
A berry “syrup” really brings this breakfast together. Add a handful or two of fresh or frozen blueberries to a ramekin and microwave for 30-60 seconds (or you can use a saucepan if you prefer). Then, add a teaspoon of chia seeds and stir well. The seeds will thicken the berry’s juices and make a kind of all-natural jam in a minute or two.
Step Four
Bring it all together. Spoon the oatmeal into bowls, add a scoop of the nice cream on top, then a drizzle of the berry syrup, and finally garnish with your favorite superfoods, I used walnuts and cacao nibs. Alternatively, you can do what I did in the photos and layer everything into a mason jar and top with the nice cream.
