Hi Fellas!
It's the time of the year when plums dominate in my fruit basket, its sweet taste to tart and the skin color is so inviting, and just can't resist to think of baking something delicious out of PLUM. hmmmm..., CRYPTO Airdropping and Bounty hunting can't stop me from making PLUM BARS with PECAN NUTS & CRANBERRIES ., my weekend is not so complete without munchies at my side while doing crypto thing.
So here we go, let´s do some baking...... !
Plum Bars With Pecan Nuts And Cranberries
Ingredients
250 g Flour
150 Sugar
100 ml Oil
100 ml water
4 Eggs
1/2 teaspoon baking soda
1/2 pack baking powder
1 pack vanilla sugar ( Dr. Oetker)
Juice of 1 Lemon
500 grams Plums
1/2 cup pecan nuts, halved
1/2 cup dried cranberries or raisins
2 tablespoons marmalade
confectioner´s sugar
Preparations
(Preheat oven at 180°C)
1... Wash the plums, cut into halves and remove the seeds, set aside
2... Prepare two containers to separate the egg whites and egg yolks.
3... For the first container with the egg yolk, whisk the yolk adding sugar, the lemon juice and the vanilla sugar. Beat until the mixture´s consistency becomes smooth. With a spatula, fold in flour and the sifted baking powder and the baking soda. Combine water and oil and add this by and by to the mixture beating the batter continuously until a smooth consistency is achieved.
In the meantime, beat the egg whites in the second container... until peaks formed and become stiff. Carefully fold this to the batter in the first container. Spread the batter in a lined rectangular baking tin. Arrange the plums on top of the batter, randomly add the pecan nuts as well as the dried cranberries. Cover the tin with aluminum foil to prevent from getting dark.
4... Baked in the preheated oven for 30 minutes , take the tin out of the oven, remove foil and brush the cake top with the heated marmalade. Cover once more with the alu foil and bake for 10 minutes more. To make the top crispier, you can remove the foil in the last 3 minutes of the baking time. Place the cake on a wire rack to cool it down, then cut into bars to make 12 pieces. Arrange on a platter and you may sprinkle confectioners sugar on top of the bar if you like.
OK FeIlas, I have munched out half of what I baked... hahaha . It really is a good one, you must try this recipe and do it like me, Bounty hunting with sweets beside the monitor, lol !!!
