So I woke up with the intention on cooking Canadian bacon and eggs. Get to the fridge and see a bag of collards greens I've had for three days sitting on the bottom shelf. Hey ,why not. Grab a medium pot , add two pieces of pork cured pig tails ,fill it half of water and let it boil for an hour or so with the lid on. Chop half of bellpepper to throw in with the greens add a half of teaspoon of paprika for just a bit of kick. Heat up the oven grease up a pan let it get hot and pour friendly jiffy in sizzling he goes making the edges crispy just the way my kids love. Of course hot sauce on the side.
