Today I made some cookies for a church event. It was my time making raisin and oatmeal cookies and the recipe I found was very good. I halved the quantity. You can find it here
The shortbread cookie recipe was found on the back of the box of flour I used. Simple ingredients:
1 3/4 cups of flour
250 g of butter
1 teaspoon vanilla extract
1 cup caster sugar
Beat butter, sugar and vanilla until fluffy. Add in sifted flour to make it into a dough. Bake the cookies at 160 degrees fan forced oven for 15 min.
