CHINESE LEMON CHICKEN
Ingredients

For Marinade
- 1 pound chicken breast, diced
- lemon zest, half
- 12 teaspoons crushed garlic
- 2 tablespoons soy sauce
- pepper
- salt
- 80g plain flour
- 500mL oil
- 4 beaten eggs
- 80g breadcrumbs
- 75mL chicken stock
- 1 tablespoon corn flour
- 2 tablespoons water
- 1/3 cup sugar
- 1 lemon, juiced

The steps
- In a large bow, mix diced chicken, lemon zest, garlic, soy sauce, salt and pepper. Marinate for at least 20 minutes.
- In a small separate bowls, put flour, eggs and breadcrumbs.
- Dip the chicken breasts in flour, then eggs, and then breadcrumbs.
- Heat the oil in a medium saucepan to 170C.
- Deep fry the breaded chicken until golden brown.
- Mix sugar, chicken stock and lemon juice in a small pan. Bring to boil.
- Mix corn flour with water. Add the cornflour mixture to the pan to thicken the sauce.
- Place the chicken to the pan and mix it well until the chicken breasts are fully coated with the sauce.
- Serve with rice. Enjoy!
