My feed is somewhat quiet since morning up to now. I believe since it's Super Bowl, most of Americans and those who love this big game aren't online much or at all, even 😄
If you are not into Super Bowl, what about a bowl of yummy stew? I made this delish black bean soup (that is more to a stew) that I so think it's totally worth to share a bowl or even two to you 😉
It may not look delicious (I suck at food presentation), but give this recipe a try and I am sure you'd like it as much as I do. I like it much that I don't mind having this soup/stew for a couple of days in a row. I find it to be delish 👍
Ingredients
- 1 c dry black beans, rinse and soak overnight, then boil for 10-15 mins, drain
- 1 c split peas, rinse
- 1 medium onion, diced
- 4 garlic, thinly sliced
- 2 tbsp olive oil
- 1 box pho/veggie broth
- 5 celery ribs, cut
- 20 baby carrots, cut
- 20 grape tomatoes, halved
- 2 bay leaves
- 1/2 tbsp Vegeta powder
- 1/2 tbsp smoked paprika powder dissolved in enough water
-Generous pinch of cayenne powder
I used instant pot but you can use slow coker or stove top
How To
- Heat oil, saute onion and garlic until soften, stir in beans
- Stir in the rest of the ingredients
- Cover the pot with the lid, click 'chili bean' option, adding 15 more minutes to the timer, and it's done!
