I've already eaten stuffed squid sometimes in some restaurants and I like them a lot. So today, I've tried to cook them for the first time at home and the result was really good. Here's the recipe!
Ingredients
- 5 medium fresh squids
- 2 tablespoons breadcrumbs
- 1 egg
- 2 grated parmesan spoons
- 300 ml tomato puree
- 2/3 peeled tomatoes
- salt pepper q.b.
- 1 parsley tuft
- 2 garlic cloves
- 1 bay leaf
- white wine
- 1 spicy chili
- oil
Directions
- Clean the squids : remove the head, remove the entrails and the cartilage, wash them under running water taking care to eliminate the skin. Cut the eyes and remove the soft part that is in the middle of the tentacles.
- Place the well-washed squid in a colander
- In a saucepan, pour a little olive oil, add the bay leaf and brown the calamari heads on a high flame.
- Add the white wine and cook for a few minutes.
- Chop the squids heads, adding a little parsley and add the egg, parmesan and breadcrumbs.
- Stir to obtain a homogeneous and soft mixture.
- Fill the squid with the help of a teaspoon, but do not stuff it too much. Finally fasten the end with a toothpick
- In a pan, put some oil, the sauce, the peeled tomatoes, the garlic cloves and the bay leaf and cook for a few minutes.
- Add the stuffed squid, half a glass of wine and cook for about 25/30 minutes turning them occasionally and adding hot water, if necessary.
- Halfway through cooking, make a small cut on the squids, this will serve to deflate them slightly. Serve hot.
